Grits, a ground corn porridge akin to polenta or mieliepap, are typically enjoyed with savory seasonings and sides. Despite my knack for sourcing local ingredients, I was surprised to find grits elusive in Brisbane. This culinary quest led me to my first-ever online grocery order, sourcing grits from Sydney, which took weeks to arrive—stretching my introduction to this dish over quite some time.

Grits often carry a less-than-flattering reputation. My parents, having tried them in New York, described the experience as unpleasant, citing their blandness and a “gritty” texture. Undeterred, I cooked the grits longer than the package suggested, blending butter, water, cheese, and seasoning until smooth and creamy.
